persian walnut salad

Serves 6-8 people

Walnuts provide omega-3 fats that strengthen the skin's membrane. Consuming walnuts regularly can help to lock in moisture and nutrients that keep your skin looking full and glowing! They also help to eliminate toxins in the skin's structure that can cause damage.

Ingredients

  • 1 cup walnuts
  • 1 bunch of radishes - thinly sliced
  • Handful of cherry tomatoes
  • 5 lebanese cucumbers - or any cucumber if unavailable
  • 4 spring onions - thinly sliced
  • 1 cup of chopped parsley
  • ½ cup of chopped mint
  • ½ cup of chopped dill
  • ¼ cup of chives or tarragon
  • 1 cup of crumbled feta cheese
  • A good squeeze of lemon juice
  • ½ teaspoon of allspice
  • Salt and pepper

Preparation

1. Toast walnuts on a sheet pan at 200 until lightly toasted (Keep watching, they can burn easily). Set aside to cool.
2. Add all other raw ingredients and herbs with the spices in a large wide bowl.
3. Now add cooled walnuts.
4. Toss salad well then drizzle with olive oil and lemon juice. Add salt and a little pepper to season.
